I'm Dave, the guy behind Kamado Joe Masterclass. I'm a home cook turned backyard pitmaster who believes you don't need a restaurant kitchen to make incredible food-you just need good ingredients, a little guidance, and a hot grill.
I've been cooking on ceramic grills for about 15 years, including both the Kamado Joe and Big Green Egg. Over that time, I've used them for everything from low-and-slow Texas barbecue to high-temperature searing, rotisserie cooking, baking and everyday backyard meals. Over time, I took the techniques and flavors I loved from Austin's food scene and brought them into my own backyard-then started sharing them so you can do the same.
My goal is simple: help you grill better and eat better. I break down each recipe step‑by‑step, explain the "why" behind the process, and focus on repeatable techniques you can trust-from nailing the perfect brisket bark to reverse‑searing steaks, smoking pork chops, and even turning out desserts on the grill.
Whether you're lighting your Kamado for the first time or looking to level up your Texas BBQ game, I'm here to make live‑fire cooking approachable, fun, and seriously delicious.
